Cauliflower “Potato” Salad

Ingredients:

1        large cauliflower
1cup   celery
          chives - cut into small pieces or scallion chopped (optional)
8        hard boiled eggs
          fresh parsley (cut & add through out)
          mayonnaise - to taste
          salt & pepper to taste
          paprika
          extra parsley to garnish

Wash & boil cauliflower (under cook it so it doesn’t become mushy).
Once it gets to the right stage, drain the hot water from the saucepan & submerge the cauliflower into cold water so it won’t get softer.
Cool fully. Then cut or break into pieces.

Add:
chopped light colored celery - about a cup
chopped scallion and/or chives
cut up hard boiled eggs, leaving about 3 - 4 eggs to slices for the finished salad
parsley
salt & pepper

Garnish with extra parsley, the sliced eggs, and paprika
